The Barrel Santorini is 100% Assyrtiko (50 year old vines), an indigenous grape variety in Greece, fermented in French oak barrels for approximately 6 months using sur lies method. Floral on a citrus background, with excellent integration of oak and mineral. Beautiful balance, with good acidity and lengthy finish.

10-12℃, decanting 15 minutes optimal. Best matched with smoked/grilled oily fish such as salmon and cod, as well as white meats and smoked cheeses.
